Just as I am not crafty, I am also not much of a chef. But, I can and do bake when I have time. All you have to do is follow a recipe. It is cheaper and you can make almost anything much healthier than buying the same thing at the store. I keep all the basics in our pantry and sometimes come up with my own versions of a recipe, such as these yummy chocolate banana waffles we concocted this weekend.
Over the holidays we purchased a Cuisinart waffle maker at our favorite store, Costco. We love it! It takes about 5 minutes to mix together a batch of waffle batter and a few more to cook them up. This weekend we had some over-ripe bananas in the fruit basket that needed to be used. Our daughter requested chocolate waffles so I took our basic waffle recipe and added 2 ripe bananas and some cocoa powder and voilà, we had yummy chocolate banana waffles that didn’t even need syrup.
Here’s the chocolate banana waffle recipe if you want to give it a try:
- Beat 2 eggs well;
- Beat in 2 cups of flour, 1 3/4 cups of milk, 1/2 cup of canola oil, 1 tablespoon of sugar, 2 tablespoons of baking cocoa powder, 4 teaspoons of baking powder, 1/4 teaspoon of salt, 1/2 teaspoon of vanilla extract and 2 ripe bananas;
- Spray a preheated waffle iron with non-stick cooking spray, pour mix into waffle iron, sprinkle in 4-6 semi-sweet chocolate chips and cook until brown;
