Easy and delicious pumpkin spice waffles

I’ve said before, I’m not much of a cook, but when I can find time I enjoy to bake. And, I consider weekend breakfasts a family meal just like dinners. It is a time where we sit down together as a family. Waffles tend to be one of my favorites. I have an easy recipe that can take many different forms. I shared it here a while back in the form of chocolate banana waffles. Well in honor of fall, I took a couple of tries and have modified it for pumpkin spice season. Here’s my new, easy pumpkin spice waffle recipe!

I love adding fruit to waffles. Check out our chocolate banana waffle recipe for an alternative version. Pumpkin in particular is chock full of nutrients. So not only are these pumpkin spice waffles a fun fall favorite, but they also have nutrition for your growing kiddos.

Keep all of the basic baking supplies in your baking cabinet so that you can whip these up at the spur of the moment. Once you are well practiced,whipping up a batch of waffle batter takes about 5 minutes. Our Cuisinart waffle maker then cooks them to perfection.

The other thing that I like about making a big batch of waffles is that they make quick and easy breakfasts for the following week of school days. Just pop them in the microwave for a few seconds and voilà breakfast is ready.

Here’s the newly perfected easy pumpkin spice waffle recipe if you want to give it a try:

  1. Beat 2 eggs well;
  2. Beat in 2 cups of flour, 1 3/4 cups of milk, 1/4 cup of canola oil, 3 tablespoons of sugar, 3/4 can of pumpkin puree, 4 teaspoons of baking powder, 1/4 teaspoon of salt, 1/4 teaspoon of pumpkin pie spice, 1/2 teaspoon of vanilla extract;
  3. Spray a preheated waffle iron with non-stick cooking spray, pour mix into waffle iron, (Optional: sprinkle in 4-6 semi-sweet chocolate chips) and cook until golden;
  4. Finish off with whipped cream or maple syrup. Your choice. Enjoy!
